Preheat oven to 350 degrees.
Mix together:
1 cup sugar
1 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
Roll into small balls, (a teaspoon full works well), and press the center down with your thumb.
Sprinkle with sugar and bake at 350 degrees for 12 minutes.
Place a milk chocolate star in the center and let them cool a few minutes before placing them on a wire rack.
Makes 24 small cookies or 12 large ones.

I'm going to give your peanut cookies a try when Eden comes to stay the week before Christmas. We'll be busy cooking and doing the last minute shopping then too.
